Rice Cakes with Salmon

Ingredients:

8 thin rice or corn cakes
3 avocados
10ml lemon juice
200g Smoked salmon fillets
1/2 punnet cherry tomatoes

Method:

  1. Cut open avocadoes and remove pit
  2. Scoop out flesh and mix with lemon juice
  3. Slice cherry tomatoes into halves
  4. Spoon mixture onto rice / corn cakes
  5. Top with salmon fillets and tomatoes

Serves 6- 8
