Ingredients:
8 thin rice or corn cakes
3 avocados
10ml lemon juice
200g Smoked salmon fillets
1/2 punnet cherry tomatoes
Method:
- Cut open avocadoes and remove pit
- Scoop out flesh and mix with lemon juice
- Slice cherry tomatoes into halves
- Spoon mixture onto rice / corn cakes
- Top with salmon fillets and tomatoes
Serves 6- 8
