Mini Vegetable Frittatas

Ingredients:

6 zucchini
2 tomatoes
1 medium red capsicum
1 medium onion
3 eggs
1/4 tsp oregano
Pinch of basil
Pinch of thyme
1/2 cup of reduced fat cheddar or tasty cheese
12 cupcake papers

Method:

  1. Place cupcake papers into cupcake tins
  2. Preheat oven to 200° C / 400° F
  3. Slice zucchini into 2cm width
  4. Slice tomatoes, onions and capsicum into fine pieces
  5. Place zucchini into cupcake tins before topping with tomatoes and capsicum
  6. Beat eggs with oregano, basil and thyme
  7. Spoon 1 1/2 to 2 Tbsp of egg mixture onto the top of each patty
  8. Sprinkle with cheese
  9. Bake in oven for 10 – 12 minutes or until cheese has turned golden

Serves 6- 8
