Ingredients:
6 zucchini
2 tomatoes
1 medium red capsicum
1 medium onion
3 eggs
1/4 tsp oregano
Pinch of basil
Pinch of thyme
1/2 cup of reduced fat cheddar or tasty cheese
12 cupcake papers
Method:
- Place cupcake papers into cupcake tins
- Preheat oven to 200° C / 400° F
- Slice zucchini into 2cm width
- Slice tomatoes, onions and capsicum into fine pieces
- Place zucchini into cupcake tins before topping with tomatoes and capsicum
- Beat eggs with oregano, basil and thyme
- Spoon 1 1/2 to 2 Tbsp of egg mixture onto the top of each patty
- Sprinkle with cheese
- Bake in oven for 10 – 12 minutes or until cheese has turned golden
